Ingredients:

Serves 4

  • 1 lb chicken breast
  • 3 tbsp grainy mustard
  • 2 tbsp honey mustard
  • 2 tbsp olive oil
  • 4 cups broccoli, florets
  • 1/4 tsp garlic powder
  • 1/2 tbsp oregano
  • 1/2 lemon

Directions:

  1. In a bowl, mix together the chicken, mustard, honey mustard and one tbsp olive oil. Mix well to coat chicken and let sit for at least 15 minutes to marinate. 
  2. Preheat oven to 375 degrees F and line a baking tray with parchment paper or tin foil.
  3. In a another bowl, combine broccoli, garlic powder, oregano and remaining olive oil. Mix well to make sure broccoli is coated. 
  4. Place chicken onto the baking tray along with the broccoli. Squeeze the juice from the lemon over everything and bake for about 25-30 minutes, until chicken is fully cooked through and broccoli is tender. 
  5. Serve and enjoy!
