You can even double up this recipe and freeze it in popsicle molds for whenever you’re craving mint chip ice cream!

When I make a low-carb shake, I like adding extra sources of fiber and fats to balance it out. This recipe is a fantastic way to sneak in vegetables, using both frozen cauliflower rice and spinach for their abundance of dietary fiber and powerful antioxidants. I often use nut butters as a source of healthy fats, but I wanted a more subtle flavor and opted for avocado instead! If you’ve never used avocado in your shakes, I highly recommend it!
