Vegan Pumpkin Pie Recipe

Thanksgiving is officially here, which means it's time to break out the Thanksgiving turkey, stuffing, casseroles, and more. But who can forget about dessert?! Dessert is arguably the best part about Thanksgiving, and I'm loving it even more with this delicious Vegan Pumpkin Pie recipe.

If you know me, you know about my love for healthy cooking. And this vegan pumpkin pie is no exception. I love a good challenge, and this recipe was the perfect opportunity to create a seasonal favorite that tastes delicious and provides mouth-watering nutrition while fitting into a vegan lifestyle.

And yes, that means this recipe uses zero dairy products! Instead, I use condensed coconut milk and cashew milk. But even if you're not vegan, I think you'll love how the vegan ingredients give the pie an extra nutty and sweet flavor

What You Need to Make This Recipe

Let's first review what ingredients I used to make this vegan pumpkin pie! You'll need condensed coconut milk, cashew milk, 310 All-In-One Pumpkin Spice, pumpkin puree, pumpkin pie spice, coconut sugar, maple syrup, cornstarch, vanilla extract, and sea salt.

Then I topped it all off with pecans and vegan whipped cream! I opted to buy a pie crust versus making my own, but if you're up for the challenge you can try your hand at making some homemade crust. The recipe takes about one hour in total and serves around 8 people (or fewer if you're like me and crave a bigger slice!).

How to Make This Recipe

Now let's get to the pie making! Here's the recipe for my delicious vegan pumpkin pie.

Ingredients:

  • 1 pie crust (store-bought or homemade) 
  • ½ cup condensed coconut milk (or coconut cream) 
  • ¾ cup cashew milk 
  • ½ cup 310 All-In-One Pumpkin Spice 
  • 1 (15-ounce) can pumpkin puree 
  • 1½ teaspoon pumpkin pie spice 
  • ⅓ cup coconut sugar 
  • 3 tablespoons maple syrup 
  • 3 tbsp cornstarch 
  • 2 teaspoon vanilla extract 
  • ½ tsp sea salt 
  • Toppings: pecans & whipped cream

Directions:

Total Time: 1 hour 

  1. Preheat the oven to 350 F. Set aside your pie crust while you prepare the filling.
  2. In a large bowl mix together the cornstarch, protein powder, and pumpkin pie spice. Then mix in the remaining ingredients until well combined and reaches a smooth consistency.
  3. Pour your pumpkin filling into the pie crust and smooth out the top. Top with pecans circling around the edge of the pie. 
  4. Bake for 45-50 minutes and serve with whipped cream.

Serving Size: 1 pie slice (recipe makes about 8 slices)

  • 17g protein 

Recipe Modifications

Baking is a bit more precise than making shakes, so I tend to follow the recipe more rigidly to ensure I get the ratios of the ingredients correct. However, you can still toss in or swap out ingredients to suit your own taste preferences!

Below are some alternatives you can try incorporating…

  • Add nuts for crunch and more healthy fats
  • If you're not vegan you can swap out the coconut and cashew milk for cow milk
  • Almond milk instead of coconut 
  • Add some cacao nibs for chocolate chip texture
  • Dash of nutmeg and clove for more “spiced” flavor
