I love adding texture to my shakes because it helps me drink slower and makes it feel more like a meal. If you’re in the mood for some crunch, this Keto Coconut Cashew Chip Shake is going to excite your taste buds and satisfy your sweet tooth. The flavors remind me of a chewy coconut cookie, but it’s full of nutritious (and keto-friendly!) ingredients to support your health and wellness goals.

In This Recipe

For the ultimate mouthfeel, I use unsweetened coconut flakes and cacao nibs to recreate the texture of a chocolate chip coconut cookie. Both are sources of healthy fats and fiber and fit keto and low-carb guidelines. And, the shake is balanced with plant-based proteins to promote satiety, making it an ideal breakfast, snack, or dessert. If you’re not following keto, you can still enjoy this shake for a yummy and quick way to pack essential nutrients into the day!

What You Need to Make this Shake

The ingredients I used to make this shake are 310 Organic Toasted Coconut, unsweetened coconut milk, cashew butter, dried unsweetened coconut, frozen cauliflower rice, cacao nibs, and ice. If you don’t have cashew butter, you can also use actual cashews.

310 Organic Toasted Coconut

There’s a lot of coconut-flavored products that are often too sugary and artificial for my preference, but 310 Organic Toasted Coconut captures the nuttiness and subtle sweetness of real coconut perfectly. It’s formulated with Stevia and other natural flavorings for a delicious and tropical treat that pairs well with a wide variety of ingredients. With 15g of plant-based proteins per serving, this shake is an easy and fun way to incorporate more protein into your diet.

How to Make this Shake

Let’s put this shake together! Simply add all the ingredients into a blender and blend for 30 to 40 seconds or until well incorporated. For a thinner drink, add more coconut milk. Once you reach your desired consistency, pour your shake into a glass or shaker cup and enjoy your low-carb dessert!


  • 1 scoop 310 Organic Toasted Coconut
  • 1 cup unsweetened coconut milk
  • 1 tbsp cashew butter
  • 1 tbsp dried coconut, unsweetened
  • 1 cup frozen cauliflower rice
  • 1 tbsp cacao nibs
  • 1/2 cup ice


  1. Combine ingredients in a blender and blend until completely smooth.
  2. Serve and enjoy!
