- 2 slices sweet potato (see directions)
- 3 hard-boiled eggs
- 1 avocado
- salt & pepper
- Take a sweet potato and slice it vertically down the center. Slice a large slice from each half of the sweet potato, making two slices total from the largest part of the potato.
- Place each slice in a toaster oven and toast until lightly browned.
- Top with mashed avocado and sliced hard-boiled eggs. Finish it off with a dash of salt and pepper.
