Cookie Ingredients:
- 1/2 cup 310 Gingerbread Shake
- 1 cup almond butter
- 1/2 cup monk fruit or coconut sugar
- 2 eggs
- 1 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
Optional Icing Ingredients:
- 1/2 cup plain Greek yogurt or low-fat cream cheese
- 1/4 teaspoon lemon extract or lemon juice
- 1/2 teaspoon monk fruit or coconut sugar
Directions:
- Preheat the oven to 350 degrees F and line a baking tray with parchment paper.
- In a bowl, combine 310 Organic Gingerbread, almond butter, monk or coconut sugar, eggs, coconut oil, vanilla and salt. Mix well until a batter forms.
- Scoop out batter about 1-2 tbsp at a time. Roll into a ball and place on the cookie tray. Repeat until tray is filled and then using either the palm of your hand or a measuring cup, flatten out the cookie balls on the tray. Press them flat so they get thin and crispy.
- Bake for about 12 minutes and take the cookies out to cool.
- Mix together the optional icing ingredients and spread some on each cookie if desired, then enjoy!
