Low-Carb Carrot Cake Shake Recipe

To be honest, I didn't understand all the fuss over carrot cake when I was a kid, mostly because I didn’t like the thought of having vegetables in my dessert! Fast forward and here we are adding spinach, kale, cauliflower, and all sorts of veggies into sweet treats like shakes and smoothies - and I love it! This Low-Carb Carrot Cake Shake is my spin on classic carrot cake that anyone and everyone can enjoy, including those of you who are following low-carb or even keto guidelines!

This spiced shake is not only the perfect fall dessert, but it’s the best way to sneak in your veggies! I, of course, couldn’t make this shake without carrots, which are packed with antioxidants like beta carotene to promote immune function. Along with carrots, I also include frozen cauliflower rice for extra nutrients including great fiber, to enhance the health benefits of this shake while keeping it low in carbs.

What You Need to Make this Shake

The ingredients that this recipe requires are simple! You just need 310 Organic Vanilla, unsweetened almond milk, a small carrot, frozen cauliflower rice, chopped walnuts, cinnamon, nutmeg, vanilla extract, and ice. You can also use a handful of baby carrots instead of a small carrot. Plus, any extra you have leftover make for a great healthy snack!

The best way to achieve a cake or pie-like flavor is with my tried-and-true, 310 Organic Vanilla! It’s no secret that I love using 310 Shakes in all my smoothies, but 310 Organic Vanilla is my preferred meal replacement shake for a sweet, creamy, and vanilla bean taste. It’s completely sugar-free and sweetened only with Stevia and monk fruit so it truly supports a clean and healthy diet.

Ways to “Shake Up” this Recipe

I tend to follow a recipe a bit more rigidly when it comes to baking because there is a science behind it all to create the perfect texture and consistency. When it comes to shakes, however, the recipe simply serves as a guide and anything goes! To give you some ideas, below are just some ways you can cater the recipe to suit your own personal taste…

  • Frozen banana instead of frozen cauliflower rice
  • Cashew or coconut milk in place of almond milk
  • Add unsweetened Greek yogurt or 310 Collagen for a boost of protein
  • Almond butter or walnut butter instead of walnuts for a creamier texture
  • Make it keto: add a little less carrot and bump up the fats by adding 310 MCT Oil!

How to Make this Shake

The first step to making this shake requires a little bit of chopping, but don’t worry, you can still make this shake in under five minutes! Just give your walnuts and carrots a rough chop to help the blending process.

Once you have your chopped walnuts and carrots, combine the rest of the ingredients in a blender and gradually blend from a medium to high setting until everything is smooth, making sure there are no chunks remaining.

Finally, pour your finished creation into a glass, garnish with a dash of cinnamon or nutmeg, and enjoy a low-carb yet totally satisfying dessert shake!

Ingredients:

  • 1 scoop 310 Organic Vanilla
  • 1 cup unsweetened almond milk
  • 1 small carrot, chopped
  • 1 cup frozen cauliflower rice
  • 1 tbsp walnuts, chopped
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 dash of nutmeg
  • 1/2 cup ice

Directions:

  1. Add all ingredients into a blender and blend until completely smooth.
  2. Serve and enjoy!

  • 22g carbs
  • 12g net carbs
  • 10g fiber
  • 9g fat
  • 20g protein
